The 5 Best Omakase Spots in New South Wales for a Sushi Adventure

Ingredient Freshness: We evaluated how well each kitchen relies on ultra-fresh, seasonal seafood sourced locally or flown in directly from Toyosu Market.

Chef Expertise: We assessed the knife skills, rice seasoning balance, and classical training of the head chefs at the counter. True craft requires decades of disciplined kitchen practice to balance delicate textures and intricate flavours.

Atmosphere and Setting: We looked for intimate, minimalist dining rooms that keep all guest attention squarely on the chef. An authentic counter setting creates personal connections and lets diners watch every chef’s moves.

Stepping into Besuto reveals an intimate 15-course omakase journey that showcases the artistry of classical Japanese cuisine. Warm timber accents create a moody setting, while skilled chefs handcraft each piece of nigiri right in front of you.

The kitchen pairs delicate seafood with luxurious touches like N25 caviar, making the entire progression feel indulgent.

One diner we spoke with said the fatty tuna brushed with aged soy practically melted on the palate, with a rich texture and unbelievable sweetness.

You can also pair your dishes with curated whiskies or premium sake, adding another layer to the experience.

The only real catch is that lunch sittings are strictly limited to Fridays and Saturdays. So, if you’re hoping for a daytime omakase experience, you’ll need to book early.

Pros

  • Creative sake and whisky pairings
  • Prime Sydney CBD location
  • Decadent optional caviar courses

Cons

So delicious and well presented

My husband and I had an amazing time at Besuto, Omakase. The cocktails were delicious, Kyoto Day Dreams and Stroll in Okinawa are our favourites!

The chef prepared each dish with care, so delicious and well presented. Each dish is nicely timed, didn’t feel like we had to wait for the next dish to come out. Our waiter was superb, funny and friendly, he made us feel so welcome.

The atmosphere was lively and fun throughout the evening. We enjoyed every moment and looking forward to coming back!

One of Sydney’s best intimate omakase experiences

This is one of Sydney’s best intimate omakase experiences with so many exceptional courses!

Some of the highlights include the luxurious silky smooth chawanmushi, the rich succulent patagonia toothfish, delicious m9+ wagyu beef cuts, flavour packed miso soup with pipis and the finest nigiri expertly crafted in front of your eyes including heavenly bluefin otoro with caviar.

They also have a wonderful sake pairing that was really well thought out to balance with the food, and also super generous in servings!

Plus, the cosy room adds to the intimate feel, making them a great spot for a refined adult dinner.

However, if you’re looking for a more casual late-night gathering, you might prefer standard BYO party venues instead.

  • Three-star Michelin kitchen heritage
  • Menu refreshes every quarter
  • Beautiful artistic plating style
  • Welcoming BYO wine option

Cons

Well portioned, and filling

Probably one of the best in Sydney.

Ingredients are premium and fresh. Well portioned, and filling. Breaks between plates are well timed.

Cocktail menu is also one of the best in Sydney and probably takes #1 for Sydney omakase.

Can’t really find any fault tbh.

Highly recommend for anyone looking for a top-tier sushi experience

An unforgettable omakase experience from start to finish. Every dish was beautifully crafted, with the freshest ingredients and thoughtful touches like the bright green shiso palate cleanser. The chef’s attention to detail shone through in every bite, and the service was warm and attentive without being overbearing. The intimate counter setting made the whole meal feel special. Highly recommend for anyone looking for a top-tier sushi experience in Sydney!

The whole experience feels carefully put together from start to finish, with plenty of variety to keep your taste buds interested.

However, keep in mind that the later seating is reserved for the extended multi-course menu. So, if you’re after a quicker dinner, you’ll need to book an earlier time slot.

Pros

  • Diverse regional Japanese delicacies
  • Dramatic straw-smoking techniques
  • Rich seafood broth courses
  • Central Sussex Street location

Cons

  • Late seating serves long course only

Highly recommend

Beautiful experience. Amazing ambiance, food and a very extensive wine list. We went for the second sitting which is the longer course. The whole experience was about 3 hours and it was 3 hours of pure bliss. Top quality ingredients. Only 8 seats so the ambiance is amazing. The synergy between the chefs and the waiters were great as well – kept us engaged but not intrusive. Definitely one of the better omakase in Sydney. Highly recommend.

Overall a delicious meal

The omakase restaurant is located upstairs via the elevator with eight counter seats. For the first seating they have a short and long course menu. The long course has three extra dishes. They also offer add-ons which I didn’t order. Highlight was the bowl of sashimi consisting of sea urchin, scampi, caviar and salmon roe; the thinly sliced squid nigiri giving it a unique creamy texture; and the grilled mackerel pressed sushi. Overall a delicious meal; very fresh seafood and the service was good. The chefs and staffs were friendly.

4. HACO

Website: http://hacosydney.com.au/

Address: 102/21 Alberta St

Contact: +61 408 866 285

Hours: Friday-Saturday, 12:00 PM – 2:00 PM | Tuesday-Saturday, 6:00 PM – 10:00 PM

Named after the Japanese word for theatre, HACO turns each course into a dramatic presentation right before your eyes.

Executive Chef Kensuke Yada puts a fresh spin on traditional multi-course dining by combining smoky charcoal grilling with the light, crisp crunch of specialty tempura.

A regular customer we spoke with said the abalone and tender wagyu skewers cooked over glowing binchotan coals are hard to beat.

The tempura is just as impressive, with crisp batters that don’t feel greasy and let the natural flavours of sweet ocean prawns and seasonal vegetables shine.

There’s one thing to plan for, though. Any cancellation made within 48 hours of your reservation comes with a charge for the full meal price, so make sure your plans are firm before booking.

Pros

  • Distinctive charcoal and tempura omakase
  • Intimate theatre-style counter setup
  • Competitive entry price point
  • Freshly fried, greaseless tempura textures

Cons

  • Strict 48-hour cancellation fee

Amazing omakase experience

The Mog Champ sends his regards.

HACO provided an amazing omakase experience. While most of the menu didn’t look like your usual tempura, it was delicious from the start to end. In the end, tempura just means fried and they were lightly for sure.

Would definitely come back again

It’s been a while since i was here but still think about the experience and the food here from time-to-time so I had to write a review! If you’re thinking of treating yourself or doing an intimate celebration with a friend/partner, and want to go a bit fancier than usual— get yourself some of that omakase experience, HACO is really beautiful from food to service to atmosphere. I still crave the food I had here, literally everything that was on the menu!! Would definitely come back again 🙂

  • Ultra-exclusive ten-seat dining counter
  • Luxurious Barangaroo harbour setting

Cons

  • Only one sitting Tuesday to Thursday

Every dish was perfectly plated

Had an incredible omakase experience curated by Yoshii-san and Hyota-san! One of the most memorable (and delicious) omakase in Sydney.

Every dish was perfectly plated with the right balance of flavour, which was complemented by the atmosphere of the restaurant with a waterfront view.

Very fresh seafood

Made a reservation for the omakase which is located in a private room at the entrance to Nobu. The course included about ten pieces of sushi, a beautifully arranged plate of sashimi representing the current seasonality, and several other dishes. All the seafood used in the omakase were very fresh and was especially noticeable when tasting the sashimi.
